mexican meatloaf

MEXICAN MEATLOAF
2 pounds ground beef
½ cup finely chopped onion
1-3/4 cups crushed tortilla chips
1-1/4 cups prepared salsa (mild, medium or hot)
6 ounces shredded Monterey Jack cheese
1 teaspoon each: ground cumin, chili powder, kosher salt
¼ teaspoon ground black pepper
2 eggs, beaten
Set aside 1/4 cup of the tortilla chips, ¼ cup salsa and 2 tablespoons shredded cheese for garnish.
Put all ingredients in a large mixing bowl. Using a fork or your hands, mix gently to combine all ingredients thoroughly. Shape the beef mixture into a loaf and place in a loaf pan or a 10-by-6-inch baking dish.
Bake at 350 degrees for 50 to 60 minutes. Remove meatloaf from oven, and top with reserved chips, salsa and cheese. Return to the oven for 10 minutes or until interior of meatloaf reaches 160 degrees. Serve with salsa and sour cream. Serves 6 to 8.
